omnomnom

Smoked cheddar in lasagna adds a nice flavor profile.

I'll take that as a compliment to my culinary cheese-pairing skills.

Is there a part of "omnomnom" that was unclear to you? :-)

If you like that, you might try doing a google search for "king ranch casserole". It's basically a Tex-Mex version of lasagna.

My liking for "traditional" lasagna is inversely proportional to how much ricotta it contains. I really don't care for ricotta or cottage cheese, but I usually include at least a little bit because I've never been able to figure out if ricotta is a "structural necessity" (it won't turn out right if it's not in there), or if it's just a taste thing, where I can completely eliminate it without worry.
